Basil Spinach Pesto
Basil-Spinach Pesto
Yields 1.5-2 Cups Pesto
Ingredients:

3 oz basil leaves

6 oz fresh spinach

2 oz parmesan cheese, grated

1/2 tsp granulated garlic

2 Tbsp lemon juice
-
1/2 tsp salt
-
1/4 tsp fresh ground pepper

1/3 cup extra virgin olive oil
Directions:
Place everything except olive oil in the food processer. Add a tablespoon or two of the olive oil, and process everything to a puree. Gradually pour in the remaining olive oil while the processor runs.
Transfer to quarter pint jars, label and freeze
