Smoked Salmon Crustless Quiche
Ingredients: (serves 2)
3 eggs
4 oz milk
1 oz heavy cream
1/8 tsp salt
1/2 tsp dried dill
1/2 tsp fresh chopped chives
1 oz smoked salmon
1 Tbsp fromage blanc
Instructions:
Heat the oven to 375. Spray large ramekins with cooking spray. Mix the eggs, milk, cream, salt, dill and chives with the immersion blender. Divide egg mixture among the ramtekins equally. Sprinkle the top with flaked salmon and small chunks of cheese. Bake for 22-27 minutes, until puffy and set. Hold in the warmer until serving.
