Bacon, Mushroom, and Swiss Cheese Omelette
Ingredients:
2 fresh Eggs
1 oz sliced Mushrooms
1.5 cooked Bacon Slices, chopped
1 oz grated Swiss Cheese
2 Tbsp Mornay Sauce
Chopped Chives
Salt
Pepper
Olive Oil
Butter
Instructions:
Saute mushrooms in olive oil or bacon fat over low to medium heat. As they start to soften, add the bacon. When mushrooms are nearly fully tender, and bacon is warm, turn off heat and cover to keep warm.
Whisk together eggs, saltm and pepper.
Heat a little oil and/or butter in a non-stick skillet. Add the eggs. Cover and cook until eggs are nearly set, stirring a couple times to push uncooked eggs to bottom. When eggs are nearly set, add the mushroom filling and swiss cheese to one half of the omelette, then fold over.
Drizzle with mornay sauce, sprinkle with chopped chives, and serve with griddled toast on the side.
