Vegetarian Breakfast Sandwich Filling
Ingredients:
2 Tbls Olive Oil
14 oz Artichoke Hearts, chopped
10.5 oz Fresh Spinach
2.1 oz Sun-Dried Tomatoes, drained and chopped
1 ¼ tsp Oregano
1 tsp Onion Powder
Directions
Chop artichoke hearts and tear up spinach. In a saute pan over medium heat, saute the artichokes, spinach, sun-dried tomatoes and spices in olive oil until spinach is wilted. Use immediately (for about 20 sandwiches) or freeze in ice cube trays.
